Chef Simone Selva
Simone Selva is among the youngest and most brilliant talents in Italian avant-garde cuisine. Born in Aquileia in 1996, his formative journey winds through some of the most acclaimed establishments on the international stage: from Osteria Altran in Ruda, El Coq in Vicenza, through the experience at Venissa on the island of Mazzorbo, to Pollen Street Social in London.
His rise is marked by prestigious accolades: he earned his first Michelin star at just 23 at Wisteria in Venice, then confirmed his talent by achieving a second Michelin star in Treviso, at the helm of restaurant Vite. After his experience as head chef at Agli Amici Rovinj, Simone chose Valdobbiadene to bring his new project to life: Trame.
Simone Selva's cuisine is distinguished by a relentless pursuit of the finest ingredients and technique, capable of dismantling classical patterns to build new equilibria of flavour, deeply rooted in memory yet projected towards the future.
The Tramet Family
A deep, centuries-old bond with hospitality and fine dining. The art of the table and hospitality have been the soul of this place for over two centuries. Today this tradition is renewed by the Tramet family, who have relaunched the entire agricultural estate, giving life to this evocative reality.
Giulia and Alessandro Tramet, at the helm of Fasol Menin Winery since 2020, chose to entrust the creative direction of the culinary vision to chef Simone Selva, creating a natural synergy between author cuisine and the great Venetian winemaking tradition.
A Bond Between Generations
The choice of Valdobbiadene is no coincidence. Here, in the heart of the UNESCO Prosecco Hills, Simone finds the perfect environment to express his vision: a cuisine rooted in the territory yet projected towards the future.
The proximity to Fasol Menin Winery, with its two-century history and excellent wines, creates a complete enogastronomic experience, where each course dialogues with the wines of the territory.
